Christian Gosset's La Cheminée Aÿ Grand Cru 2018 is a champagne that combines powerful substance with elegant lines.
This cuvée is made from Pinot Noir grapes harvested on August 27, 2018 from the "La Cheminée" parcel in the Aÿ Grand Cru commune. This parcel, planted in 1993, is located at the top of the hillside and faces west, on a steep 45% slope with chalky soil.
Vinification takes place entirely in oak barrels, as naturally as possible, without filtration or chilling. The wine is very lightly dosed at 1 g/L after disgorging in April 2022.
This cuvée has a deep pink-gold color.
The nose is open, revealing aromas of cooked and dried fruits, followed by toasted and brioche notes.
On the palate, the attack is comfortable, then the very fine substance appears. The effervescence blends perfectly with the body of the wine, which is very elegantly lively. The palate is full, dense and racy.
The finish is precise, structured and lingers for around ten seconds.
This Champagne La Cheminée Aÿ Grand Cru 2018, by Christian Gosset, is the perfect match for earthy products with rich, elegant and tender chaires, such as veal, beef and venison fillets; poulardes de Bresse or capons.
This wine has magnificent ageing potential.
