Description

This Cuvée Seconde Nature 2016, by Bonnet-Ponson, is a balanced, fresh champagne with lovely aromatic complexity.

This cuvée, made with the cœurs de cuvée from the 2016 harvest, is blended with 45% Pinot Noir, 40% Chardonnay and 15% Meunier. The grapes come from "les Vigneules", "les Spectres" and "les Caquerets", a commune classified as a Premier Cru on the Montagne de Reims. These vines, planted 30 years ago, benefit from south-east exposure, clay-limestone soil and a sandy subsoil rich in fossilized shells.

This Seconde Nature 2016 champagne is vinified without sulfites, fining or filtration, in 228- to 400-liter barrels. Malolactic fermentation is carried out, and the wine is aged on fine lees for 9 months. This cuvée is not dosed to preserve the characteristics of the vintage.

This champagne exhales beautiful floral, spicy and fruity notes. A lively attack on the palate, followed by a clean, pure mid-palate. The structure is straightforward, and fresh, lemony notes accompany the vinosity and fruitiness of the Pinots. The finish is supported by a salivating mineral texture.

This Cuvée Seconde Nature 2016, balanced between minerality and freshness, is a perfect match for the iodized flavor of seafood.
