This Le Jour cuvée, produced by Bonnet-Ponson, is a Blanc de Noirs vinified entirely without sulfites, fining or filtration.
This single-varietal, single-cell champagne is made exclusively from Pinot Meunier from the "Le Jour" plot in the Vrigny terroir, a Premier Cru of the Montagne de Reims. The vines, which date back to 1971, are planted on clay-loam soil and a limestone subsoil, giving the Meunier a lovely roundness.
This cuvée is vinified in 228- to 400-liter barrels using indigenous yeasts. Malolactic fermentation is carried out, and the wine is aged on fine lees for 9 months. This champagne is not dosed to preserve the special characteristics of the terroir and grape variety.
This champagne is fruity and spicy, with an ample, gourmet, mineral mouthfeel and a long, saline finish.
Cuvée Le Jour is the perfect accompaniment to white meats and mild cheeses.
