Created in 1988 as a tribute to Elisabeth Salmon, co-founder of the House, this cuvée is distinguished by the brilliance and puritý of a very noble wine with a unique character. This cuvée is the fruit of demanding, recognized expertise and the rigorous selection of an exceptional year.
This cuvée is composed of 76% Grands crus and 24% Premiers crus. It is a blend of 55% Pinot Noir from Montagne de Reims and Vallée de la Marne with 45% Chardonnay from Côte des Blancs. 9% of the Pinot Noir is vinified as red wine from grapes grown on Valofroy (Mareuil-sur-Aÿ), a parcel of old, steep, south-facing vines.
Most of the wine is vinified in stainless steel tanks, but 17% is also made in oak barrels. Malolactic fermentation is partial, and this 2008 Elisabeth Salmon cuvée is aged on lees for 10 years in our cellars before being disgorged. The dosage is 7 g/L.
This champagne has a very bright, brilliant visual presence, with a salmon-pink hue and graceful effervescence.
On the nose, this cuvée reveals a refreshing sensory expression of citrus peel and red fruit jelly. The aromatic amplitude is rich and complex, with notes of Plougastel strawberry, Mara des Bois and vine peach, followed by mature fragrances of sweet spices and wild raspberry pulp.
On the palate, a measured yet delicate power emerges, with gourmet flavors of tangerine, blood orange and kidney tart. The structure is ample and full-bodied, then expresses itself on a chalky point with a persistent finish of citron zest and red and white currants.
This Elisabeth Salmon 2008 cuvée, with its delicate texture and flavors, is the perfect accompaniment to Bresse poultry with crayfish or royal Brittany langoustines.
