The Le Sous Bois cuvée from Billecart-Salmon is a blend aged in oak barrels, a characterful cuvée that will accompany a meal from cocktails to cheese.
This cuvée combines the three emblematic grape varieties of Champagne: 43% Chardonnay from the Grand Crus of the Côte des Blancs, 28% Pinot Noir from the Premier and Grand Crus of the Montagne de Reims, Aÿ, Mareuil-sur-Aÿ, and 29% Meunier harvested in the Vallée de la Marne. Vinified entirely in old oak barrels, it perpetuates an ancestral know-how. Once bottled, this cuvée benefits from a maturation on lees for 5 years. This long aging allows the wine to develop great aromatic complexity and a silky texture. The Extra Brut dosage highlights the purity and balance of this cuvée.
The Le Sous Bois cuvée relies on a base year, enriched by a collection of reserve wines dating back to 2006. This blend of several vintages gives this cuvée remarkable depth.
Le Sous Bois displays a crystalline color, an intense golden yellow. Its bubbles are fine and regular.
The nose reveals a great aromatic richness: pastry, citrus, orchard fruits. Notes that evolve towards a touch of mocha and bergamot. An impressive olfactory intensity.
On the palate, the cuvée reveals a silky and elegant texture. Subtle flavors of milk rolls, melted butter, and soft spices blend with a dazzling freshness. The long and refined finish is enriched with grilled and toasted aromas.
The price of the Le Sous Bois cuvée bottle from Billecart-Salmon is 77,95 €. This is a champagne that benefits from the exceptional quality of the selected grapes, the meticulous know-how of wood vinification, and five years of cellar maturation. For lovers of gastronomic champagnes, this cuvée offers an excellent quality-price ratio.
