Maison Billecart-Salmon's Blanc de Blancs, presented here in magnum format, is made from Chardonnay grapes from five Côte des Blancs grands crus: Avize, Chouilly, Cramant, Mesnil-sur-Oger and Oger.
Its composition, a blend of two different years, reveals all the specificity of Chardonnay.
Drawing on long-established traditions, such as the vinification of grands crus in barrels, the house ages its bottles in an extensive network of 17th- and 19th-century chalk cellars. The temperature is constant at around 12°C, enabling the production of fine bubbles.
Blanc de Blancs Billecart-Salmon has a fine mousse with delicate bubbles that elegantly accompany the golden highlights of its color.
Its nose surprises with aromas of almond mixed with those of white-fleshed fruit.
Complex and powerful on the palate, with a pleasant vinosity. The finish is fresh and elegant.
