The cuvee Nicolas François Billecart from Billecart-Salmon was elected «Cuvée of the millenium», for its 1959 vintage, in a competition reuniting oenologists and experts in a blind tasting of 150 different vintages from the top champagne houses. The cuvée Nicolas François Billecart 1961 came second.
This prodigious champagne, created as a homage to the founder of Billecart-Salmon, is the result of blending Grand Crus from the Côte des Blancs (Chardonnay) and the Montagne de Reims (Pinot Noir).
The partial vinification in traditional small barrels accentuates the generous character of this fine, rich and elegant champagne. With the cuvée 2000 Billecart-Salmon perpetuate the tradition and confirm their skills.
Strongly anchored in tradition, such as the use of barrels for the grand crus, Billecart-Salmon age their bottles in an extended network of caves cut out of the chalk hills, dating from the 17th and 19th century.
The constant temperature – around 12°, enables a very fine effervescence to develop.
The cuvee Nicolas François Billecart is a splendid pale gold color with fine mousse nourished by long-lasting bubbles which rise softly.
This champagne develops broad olfactory complexity with aromas of white flowers integrating with subtle notes of brioche.
The palate is dense, lightly saline with good acidity, well-balanced and persistent.
This rich blend of Grand Crus leaves a sensation of freshness.
