Ayala Blanc de Blancs 2013 is a champagne focused on tension and vivacity. It's a cuvée that goes wonderfully well with an aperitif.
This Blanc de Blancs 2013 is made from the finest Chardonnay grapes from the Côte des Blancs, and in particular from the Grand Cru villages of Mesnil-sur-Oger, Chouilly and Cramant.
Ayala's signature cuvée respects the house style, with immense purity. Vinified then aged in vats, the tension and minerality offered by Chardonnay are preserved. The wine is then stored in the house cellars for 5-6 years, where it gains in complexity.
The dosage of Ayala Blanc de Blancs 2013 is light, accompanying the wine without masking it.
It has a white-gold color, with fine, dancing bubbles.
Blanc de Blancs 2013 Ayala opens on the nose with notes of citrus and white fruit.
On the palate, it's a champagne with a lively attack, then revealing a silky, taut mouthfeel. There are lovely notes of lemon, a floral touch, all carried by a beautiful minerality.
An excellent aperitif champagne, it can also be served with scallops or noble fish.
