Perle d’Ayala Nature is the non-dosed version of Ayala’s prestige cuvee. It is the one and only high quality cuvee from a top champagne house to exist in an Extra Brut version. It is unadorned, with absolutely no artifice – an authentic champagne in all its verity.
This 2001 vintage benefitted from the year’s climatic conditions which were particularly propitious to grape maturity.
Perle d’Ayala Nature is a shimmering pale gold with glinting amber flashes and refined, elegant bubbles.
Opening on notes of grapefruit and extremely ripe lemons, the nose matures after a few seconds to reveal toasted notes with a distinct freshness and a touch of menthol.
In the mouth this is a generous, complex champagne, offering a silky texture and great elegance. The citrus aromas are reinforced, enriched with hints of spice and a sold mineral architecture.
The final is long, persistent, and superb.
A blend of 80% Chardonnay and 20% Pinot Noir, this champagne has been aged for 5 years in the cellars of the maison Ayala in order to develop its full palette of aromas.
Perle d’Ayala Nature 2001 is excellent as a cocktail, and accompanies sushi, lobster and even oysters to perfection, due to the absence of sugar.
