Meeting Marc Augustin is entering a singular universe, often surprising, sometimes puzzling, always fascinating. This winemaker, based in Avenay-Val-d'Or, practices committed viticulture. He relies on an extreme practice of biodynamics and a culture of experimentation. For example, we will mention the Terre cuvée which represents the maternal element, solid and stable or the Air cuvée which embodies the soft and fine element. But the cuvée that certainly symbolizes the best of Maison Augustin is Gaïa, an intense and powerful rosé champagne, whose bottles age for one year under the parcel that gave the grapes used for its elaboration.
