Meeting Marc Augustin is like entering a unique world, often surprising, sometimes confusing, always fascinating. This winemaker based in Avenay-Val-d'Or practices committed viticulture. He relies on biodynamic methods taken to the extreme and a culture of experimentation. It's not easy to keep up with Marc Augustin during a visit. Ideas fly thick and fast, tastings of current experiments follow one after another, and there are good, excellent and unusual wines.
The Augustin range of champagnes is based on the four elements. For example, the Terre cuvée represents the maternal element, solid and stable, while the Air cuvée embodies the gentle and delicate element. But the cuvée that best symbolizes Maison Augustin is undoubtedly Gaïa, an intense and powerful rosé champagne, whose bottles are aged for a year under the plot where the grapes used to make it were grown. A thousand bottles, stored in the ground, "mature in the womb of their mother." Baffling, we know!
