To the south of the Côte des Blancs lies a small, still relatively unknown island of the Champagne appellation, the Coteaux Vitryats. It is here, more precisely in Vitry-en-Perthois, that I met Antoine Chevalier. His love for his terroir and his deep roots immediately struck me. From the first words exchanged, he speaks to me about his terroir, about this chalky soil that appeared more than 20 million years ago and gives the wine its singularity. He talks about the history of his region, situated at the heart of economic exchanges, about this vineyard attached to the diocese of Châlons-en-Champagne. He speaks passionately about his aging processes in oak barrels and vats.
Antoine Chevalier tells me about his cuvée Carkonnia. A Blanc de Blancs, made exclusively from Chardonnay from the "Le Jardin de Meunier" plot in Vitry-en-Perthois, with a rich and powerful nose and a roundness in the mouth so representative of the Coteaux Vitryats, so dear to his heart. We then discuss the cuvée Tecta Silva, made from the Chardonnays of the "Les Renardes" plot in Couvrot, with beautiful freshness and superb aromatic complexity.
