Cuvée Paradis 2015 from Maison Alfred Gratien is a champagne that goes perfectly with fish or shellfish.
This champagne is a blend of 65% Chardonnay and 35% Pinot Noir from the Premiers and Grands Crus of Montagne de Reims and Côte des Blancs. The grapes are vinified and aged in small 228-liter oak barrels. Malolactic fermentation is blocked, in order to respect the nature of the grapes and the personalitý of the terroir.
This cuvée boasts a luminous yellow-gold color, and its extremely fine effervescence rises rapidly to the surface, topping the wine with an elegant collar of bubbles.
On the nose, the wine is intense and astonishing, with aromas of pineapple, yellow peach, mimosa, vanilla, coconut and cashew nuts: an exotic and highly complex expression. It's a rare and still young nose of great originality.
The attack on the palate is lively and ample. The structure is assertive, with an elegant saline touch. The finish offers a warm, astringent note, ending on an intense chalky, saline sensation. The whole suggests the richness and great potential of this cuvée.
The salinity and silky texture of this Cuvée Paradis 2015 from Maison Alfred Gratien make it an ideal partner for dense fish or shellfish such as lobster, crayfish, cod, monkfish or st-Pierre, accompanied by tangy sauces and exotic fruits.
