Cuvée Sous les Trous 2014 is the first cuvée made by Alexandre Grimée, a young winemaker full of promise. It's an astonishing cuvée, both in terms of its production and its personality.
This cuvée is made from Pinot Meunier grapes from a single plot, Sous les Trous, located in Bonneil. This plot faces due south, where the vines thrive in clay-limestone soil.
Vinification takes place in stainless steel vats, and for this 2014 vintage, malolactic fermentation was carried out.
This is a confidential cuvée, with only 1,697 bottles and 45 magnums produced.
I make this cuvée by trying to capture the image of the year, and by seeking to preserve as much of the Pinot Meunier's freshness as possible. It's a micro-cuvée that reflects its vintage, but also all the nobility of Pinot Meunier.
Tasting
By Patrick BorrasAlexandre Grimée's Cuvée Sous les Trous 2014 has a bright, brilliant light yellow color with lemon-yellow highlights. Its bubbles are fine and discreet.
The nose is very fresh, reminiscent of citrus fruits (lemon and grapefruit). A very fine, complex nose. After a few moments, more mineral aromas of chalk and gunflint complete this beautiful aromatic palette. A nose of subtle, elegant aromas.
On the palate, the attack is rich and suave, worthy of a Pinot Meunier. A beautiful vinosity, punctuated by fresher citrus aromas, gives it a fine balance and a very pleasant length on the palate. A smooth, delicate cuvée.
I suggest you enjoy this cuvée as an aperitif or with a seafood meal. The serving temperature is important if you are to appreciate the lovely characteristics of this champagne. I recommend serving it between 8 and 9°C.
