The Le Cépage (2021 harvest) cuvée is made solely from Pinot Noir from the Grand Cru terroir of Verzy, located on the prestigious Montagne de Reims. The grapes come from old vines rooted in clay-limestone soils. These grapes bring remarkable minerality and structure.
The grapes from the 2021 harvest were vinified in oak barrels, with spontaneous fermentations using indigenous yeasts. The wines are aged on lees for 24 months in the estate's cellars. This aging brings richness and aromatic complexity. The minimalist approach adopted, without clarification or filtration, preserves all the purity of the grape variety. Finally, this cuvée was lightly dosed in Extra Brut, offering a perfect balance between freshness and intensity.
