Cuvée Sonate 2011 from Maison Fleury is the purest expression of the House's know-how and its terroirs. It's a cuvée vinified without sulphur, offering intense fruity aromas. Cuvée Sonate is particularly appreciated as an aperitif.
Maison Fleury is the forerunner of biodynamic viticulture in Champagne, having begun its conversion to organic viticulture as early as 1970, long before it became fashionable. Today, Fleury is certified Agriculture Biologique (AB) and Demeter for its entire 15-hectare estate.
Cuvée Sonate was created with the 2009 harvest, the quality of which enabled Domaine Fleury to vinify without sulfur for the first time. It's a champagne made from 60% Pinot Noir and 40% Chardonnay from the Côtes de Champraux and Charme de Fin parcels, two of the finest on the estate. On this terroir, the vines are nearly 40 years old.
Cuvée Sonate 2011 is vinified half in vats (55%) and half in oak barrels (45%). Malolactic fermentation is carried out, bringing roundness and aromatic expressiveness.
The dosage is very low, less than 1g/l.
Cuvée Sonate 2011 is remarkably fresh and expressive.

By Patrick BorrasCuvée Sonate 2011 Fleury has a light yellow color with golden highlights. Its bubbles are beautiful, fine, regular and intense. It's a beautifully brilliant wine.
This champagne offers a very fruity nose, with notes of ripe fruit, stone fruit, almonds, apple compote, complemented by some fresher citrus notes. A beautiful aromatic palette.
On the palate, the attack is rich and unctuous, with a fresh mid-palate. Aromas of very ripe fruit, apple and rhubarb. A slight bitterness on the finish lends it a certain length.
Cuvée Sonate 2011 Fleury is particularly suited to aperitifs, served at a temperature of 9°C. Beware, this is a champagne with a special character, to be reserved for lovers of unadulterated wines.
