Unique of its kind, Maison Besserat de Bellefon uses a very singular vinification process. By choosing to reduce the amount of liqueur de tirage (the liqueur used to create the bubbles), it achieves a 30% reduction in bubble size. The lighter foam gives her champagnes a creamy, unctuous character that is much appreciated. This creaminess is complemented by a freshness that is characteristic of the House. The absence of malolactic fermentation maintains a certain acidity and sparkle on the palate.
The bright, clear yellow color features fine bubbles in the form of unctuous strings.
The nose is dominated by subtle, elegant floral aromas of rose.
The fresh, well-balanced attack on the palate delivers notes of red fruit (strawberry) in harmony with honey fragrances. The finish is long and fleshy, the sign of a full, well-balanced wine.
