If matching champagne with meat does not seem obvious, there are nevertheless very beautiful resonances to discover. "Rosé champagnes find a particular echo when they are associated with beautiful poultry. In this case, I prefer bleeding rosé, richer and more vinous" explains Patrick Borras, Chef-Sommelier of the 3 * Pierre Gagnaire restaurant.
We can also turn to a pairing with a Blanc de Noirs champagne (made only from Pinot) which will bring a beautiful structure and a vinosity able to accompany meat.
